Ingredients
- 18 gGround coffeefine, for a double espresso; or 60 ml of strong moka pot coffee
- 200 mlMilkcold, full-fat
- 15 gSugar
- 100 gIce
- 60 gVanilla ice creamoptional
Method
Pull a double espresso, 36 g in 25 to 30 seconds, or brew 60 ml of strong moka pot coffee.
Shot0:28Stir the sugar into the hot coffee until it dissolves, then let it cool for a few minutes.
Blend the coffee, cold milk, and ice, with the ice cream if using, for 30 to 45 seconds until frothy. A closed jar shaken hard also works.
Blend0:40Pour into a tall glass straight away, while the froth is thick.
Tips
- Dissolve the sugar in the hot coffee first; it does not dissolve properly in cold milk.
- Cool the coffee before blending, or it melts the ice and thins the drink.
- With instant coffee instead, whisk 2 level teaspoons (about 4 g) with the sugar and a tablespoon of hot water until pale, then blend with the milk and ice.
About this drink
Cold coffee is India’s café coffee shake: strong coffee blended with cold milk, sugar, and ice until frothy, often with a scoop of vanilla ice cream. It is a staple of Indian café chains, and at home it is usually made with instant coffee. It is sweet and creamy, with more milk than coffee.
