Ingredients

Method
Put the instant coffee, sugar, and hot water in a bowl.
Whisk until the mixture is pale, thick, and holds soft peaks: 3 to 5 minutes by hand, or about 2 minutes with an electric whisk or frother.
Whisk4:00Fill a glass with ice and cold milk, leaving room at the top.
Spoon the whipped coffee on top, and stir it in before drinking.
Tips
- It needs instant coffee: spray-dried instant whips into a stable foam with sugar, and brewed coffee or espresso will not. With Askespresso beans, the nearest drink is an iced latte.
- Measure all three with the same spoon so the parts are equal; with less sugar the foam is looser and fades faster.
- For the Indian way, beat it the same way and pour hot milk over it for a frothy hot coffee.
About this drink
Dalgona coffee became known worldwide in early 2020, after a South Korean television programme and then social media. It is named after dalgona, a Korean honeycomb toffee it resembles. Equal parts instant coffee, sugar, and hot water are whisked into a thick foam and spooned over cold milk. The same beaten coffee has long been made in Indian homes as phenti hui coffee, stirred into hot milk.
