Method
Whisk the cream with the sugar until it thickens and holds soft peaks, about 2 minutes by hand.
Whisk2:00Pull a double espresso, 36 g in 25 to 30 seconds, into a small warm glass.
Shot0:28Spoon the cream on top in a thick layer, 2 to 3 cm deep.
Serve it without stirring.
Tips
- Whip the cream only to soft peaks, so it sits on the coffee but still melts into it as you drink.
- Korean cafés serve a sweeter, often iced version, usually called Vienna coffee.
About this drink
The Einspänner is a Viennese coffee house drink: strong black coffee served in a glass under a thick cap of whipped cream. The name means one-horse carriage, and the usual story is that coachmen drank it because the cream kept the coffee warm and stopped it spilling while they held the reins. The hot coffee is drunk through the cold, lightly sweetened cream.
