An espresso run long: 18 g of coffee in and about 72 g out, lighter in body and more bitter than a standard shot.

Method

  1. Grind a step coarser than for espresso. Dose 18 g into a double basket, level it, and tamp.

  2. Warm a cup that holds about 90 ml.

  3. Pull about 72 g in 35 to 45 seconds.

  4. Stop early if the stream turns thin and very pale before you reach 72 g.

Tips

  • The coarser grind keeps the long shot from over-extracting; at the espresso grind, the end of the shot turns harsh.
  • For a cleaner long coffee, pull a normal shot and add hot water, which is an Americano.

About this drink

Lungo means long in Italian: an espresso with about twice the usual water run through the same coffee. It has a lighter body, a thinner crema, and more bitterness than an espresso. It differs from an Americano, where the extra water is added to the cup after the shot.
